Concrete Blonde, Sydney
We love the fun details of this bar restaurant hybrid in Potts Point, Sydney, which all offset the stark, concrete space. There are plenty of details, twists and textures courtesy of Sydney designers, Dreamtime Australia Design. The Liechenstein inspired comic book mural and the tin-can wall slots for firewood are nice touches, too. It’s a bit glossy, and deserving of its glam moniker that was taken from 80s rock band Concrete Blonde, with a metal-studded bar and cowhide walls.
And the restaurant? Superb. Chef Patrick Dang is all about fresh produce and a fresh take on the traditional. Our picks run from the KFQ, a quail fried Kentucky style, to ceviche prawns served with a banana guacamole and spiced popcorn.
But what we’re really here to talk about are the drinks, and the bar. Concrete Blonde is a special place for Stolen Rum – it’s the first bar in Australia to serve the precious drop, and head bartender Fraser Pollard is just the man to introduce it over the ditch.

The menu is based around the elegant and simplistic fusion of an array of timeless classics and aperitif cocktails through to a more experimental slant of Mixology.”
That means the bar list wanders from house specials through to vintage favourites and the more inventive and unusual drinks. Our favourite is a rascal of a cocktail dubbed The 18th Amendment. It’s a mix of spiced and dark rum with fresh pineapple, lime, vanilla and spiced bitters – all served in a brown beer bottle, in a brown paper bag – a perfect fit for the Stolen drinker.
